Has a low sulphite content

The Vine is 100% Glera, grown on hilly terrain which has a medium mixture of calcareous marl. The grapes are harvested by hand and subjected to soft pressing.
Alcoholic fermentation takes place in stainless steel tanks at a controlled temperature, exclusively with selected yeasts giving a low production of sulphites. The resulting first pressing is transferred without filtration and is allowed to rest in storage for many months. Re-fermentation then takes place in an autoclave at a controlled temperature. This wine marries perfectly with cold meats and medium-aged cheeses, fish and poultry.
Serve at 6-8 ° C in a typical flute for sparkling wine.
